Spinach Feta Frittata,This is a beautiful frittata. We eat it for breakfast, lunch or dinner. With fresh fruit or salad depending on the meal. Enjoy,This was really good and easy to make. Next time I’ll use less spinach though, it was a bit too much.,This was great! Left out the mushrooms (personal preference, don’t like) & used Canadian bacon, bf preference & was on hand… Love my spinach & feta (used a Mediterranean seasoned blend). Always put a couple dashes (maybe more) of hot sauce in my egg mixture Also used fresh basil.to top it off Why have I never thought of this before? Thanks for sharing!

Preheat Oven to 350f Degrees. |

Cook Onion in Olive Oil Until Opaque in a Medium Skillet. |

Add Mushrooms and Cook For About 1 Minute. |

Grease a 9" Casserole Dish With Cooking Spray. |

Put the Vegie Mixture in the Bottom of the Casserole Dish. |

Add Crumbled Feta to the Eggs and Pour Over. |

Bake at 350f For Approx 30 Minutes, or Until the Eggs Are Solid. |
