Egg Salad Sandwiches,Mrs. Peterson, a lady from church, made the best egg salad sandwiches and she’d never really tell you what she put in them. This was my first attempt to duplicate her recipe. Her family thought she added butter when mixing.,Thank you for posting this! My Mom made egg salad this way, but she never had a recipe. I like using butter for a drier consistency that packs well in lunches and keeps in the refrigerator for a day or two. For those who find this salty, try omitting one of the salts and using celery seed. I don’t use add-ins if I’m storing it overnight because they get watery in the fridge.,This was very salty to our tastes. I think next time I would cut out the table salt entirely and go with only the flavored salts as listed. The butter was interesting (what’s not better with butter?) but may add calories we decide are unnecessary.
