    Eggplant (Aubergine) Patties, Another easy eggplant recipe that I found in a local newspaper , Loved the ease of this recipe used roasted garlic and grated purple onion but it was a bit bland for me used added garlic powder and topped with fresh Parmesan cheese I will serve with a dip of spaghetti sauce if used as appetizer or put on bun as a burger substitute

    Peel Eggplant and Cut Into Small Pieces.

    Boil in Salted Water Until Tender.
