Toasted Rice for Fish—-egyptian, Nicely toasted aromatic rice that almost always accompanies fish in Egypt , I made several changes to the recipe, but was happy with the results I reduced the amount of rice to 1 cup & elected to use brown rice I then only added a small amount of oil, just enough to barely coat things I stayed with the recipe amounts for seasoning and found the finished product flavorful I did have to add additional cooking time because of the brown rice I served with a saucy shrimp dish, steamed broccoli, and salad Made for Fall 09 Pick A Chef , It was interesting and easy to make, but I didn’t taste the spices at all, so I would suggest adding more or spicing it up with white or cayenne pepper

Heat the Oil Over Med-High Heat. |

Add the Onion, and Stir For Just a Minute to Coat With the Oil. |

Add the Rice and Coat Well With the Oil, Stir and Fry Until It Becomes a Nice Brown Color. |

Now, Add the Water (but Be Careful in Case It Sputters at You) and the Spices. |

Once It Is Boiling, Cover and Simmer Over Low Heat About 20 Min or Until Done. |
