Elswet’s Chicken / Shrimp Scampi, This recipe is really two recipes in one It’s also one of the best around for shrimp scampi that works just as well with chicken! This is a favorite in our house Maybe it will become a favorite in your house, too , This was just ok I’ve had a lot of shrimp scampi in my life and don’t see how this was rated so high and considered outstanding It wasn’t bad, don’t get me wrong, but it lacked flavor I don’t see how broiling it for 2 minutes made any difference I tossed it with angel hair and added a ton of parmesan cheese for more flavor My 2 year old son really liked it though!, I was actually making Recipe #26321 and saw your comments on it I followed that one for the most part but put the pasta in a dish and put the cooked shrimp over it and broiled it as you recommended I’m glad you posted your version because I tend to agree with yours and would like to try it I don’t see the need for the margarine though, omitted it

Heat Wine, Olive Oil, Butter, Margarine, and Garlic in a Large Skillet on Medium Heat Until It Just Starts to Boil. Then Add All the Other Spices, Lemon Juice, and Parsley Flakes; Stir in and Immediately Add Shrimp. Cook For About 4 or 5 Minutes or Until Shrimp Turns Pink. Don't Overcook! If Using This Recipe With Chicken, Cook Approximatey 8-12 Minutes, Until the Chicken Bits Are Cooked Throughout. |
