Erin’s Scalloped Potatoes and Ham, Nice on a cold night., This was super yummy!! I tried making scalloped potatoes a few years back, but it was one of those cream of mushroom soup recipes, and it just wasn’t edible. Finally decided to give scalloped potatoes a try again and boy am I happy I tried this recipe… it’s fantastic!! Love the cayenne pepper kick, too. This is a winner!!, Absolutely my favorite! Served it at a dish to pass meal to rave reviews…I did add a little more cayenne pepper than called for just because we like everything with a bit more spice, otherwise followed the recipe exactly. AMAZING! Won’t ever use another recipe..I have made it regularly since the first time with some slight variations… just to see if it will work. Skim milk with half and half, with and without cheese, extra ham…each time it is just as good as the first! Definitely would recommend!

Melt the Butter Over Medium-Low in a Large Deep Pan. |

Add Chopped Onions and Cook Until the Onions Are Soft. |
