Erna’s Apple Pie Muffins,When our first daughter was born, a friend brought us a pail of these delicious muffins. It was such a thoughful gesture and perfect to snack on during that first couple days at home. Whenever I make these now I can still “taste” those first new days of motherhood. Thank you Erna!,Absolutely love your recipes. I am vegan, so use plant versions of everything. This one was so great, I am selling them. Today, short on apples, decided to do an apple and blueberry mix, and instead of cinnamon, I added cocoa, so it’s a chocolate crumble topping ??,used soy milk, left out the egg completely and used a wee bit less sugar.
