Fettuccini with Grilled Chicken Breast and Vine Ripened Tomatoes, A great way to use left over grilled chicken Leave out the Chicken and you have a good vegetarain dish Enjoy, I think it’s just me, since I like more of a sauce This was pretty good, but needed something I doubled everything but the pasta, as someone else had done, which made for very interesting flavors I also added 1 zucchini sliced and quartered and 1/2 a red bell sliced and quartered, which were very nice additions I imagine you could add about any Veggie on hand and this would work, as it’s a very versitile recipe If I make this again, I will see if adding a small can of crushed tomatoes and/or a small amount of goat cheese don’t make the difference for me with my sauce issues Thanks so much for the recipe!!!, I’ve had this some time ago and then could not find it to make again It was very good My wife kept asking me to make but I couldn’t find it Now I have It’s in my cook book as well Primo!

Boil Water, Then Add Pasta, as Pasta Cooks, Heat Olive Oil in a 12 Inch Saute Pan. |

Add Garlic to Pan and Saute For About 30 Seconds. |

Add Red Onions and Mushrooms and Saute For 2 Minutes. |

Add White Wine and Reduce by Half, Then Add Chicken Broth and Reduce by Helf. |

Saute 1 Minute, Then Add Butter to Sauce. |
