    filet mignon with madeira sauce,easy enough , yet elegant,I just used the sauce recipe and it was amazing. However, in my opinion it had far too much cream. I would only use 1 to 2 tablespoons of cream- save yourself the calories!,This was really good and really easy, Chia! We easily halved the recipe to suit 2 filets and used portabella mushrooms. We served with a side of roasted asparagus and thyme. Thanks!

    In Skillet Heat 2 Tbsp Butter With Oil.

    Add Mushrooms, Garlic and Onions, Cook Until Lightly Browned, Remove, Season With Thyme,, Salt, Pepper.

    Add the Rest of the Butter and Oil to Skillet, Brown Fillets About 5 Minutes Per Side For Medium Rare, Remove.

    Add Madeira to Pan, Reduce by Half.

    Add Broth and Reduce, Add Cream and Stir to Thicken.

    Add Mushrooms Back to Pan, Add Filets to Warm Through.
