Flax Pancakes, Another treat for those of us on low carb, diabetic diets These pancakes are delicious and suitable for the whole family Note the nutritional information for this recipe; high in calcium, protein and magnesium!, I just love these pancakes sooo yummy, used just two eggs and full fat milk to make mine and they were so good, at first I thought that they were a bit runny but they turned out just fine My protein powder is vanilla flavour, and I served them with yogurt and mixed berry compote I am a bit ashamed to say I ate more than I should of but they were so good this is going to be a regular dish for me I was thinking I might try it in my waffle machine that would be great Thank you for posting Made for the diabetic forum May 2011

Stir Well and Let Sit For 3 Minutes Until It Begins to Bubble and Thicken Slightly. Using About 1/8 Cup, Spoon Batter Onto a Hot, Buttered Griddle and Let Cook Until Some Bubbles Appear on the Surface of the Pancake. Carefully Turn and Cook the Other Side For Just a Minute. |
