Fluffy Peach Pancakes, The secret to fluffy pancakes is letting the batter rest and mixing with a light hand If you have time, make the batter the night before and let it rest in the refrigerator overnight Allow batter to come to room temperature before cooking pancakes Make sure kids don’t over-mix when whisking the wet ingredients into the dry From the LCBO magazine , Already had a recipe for the pancakes, but I tried the fresh peach sauce, & it is DELICIOUS It went very well w/ the pancakes we made, but I’m sure that sauce would be delicious on some ice cream or yogurt as well mmm Thanks for posting :), I served these with whipped cream They are light and fluffy just like promised I let my rest overnight as suggested
