Tomatoes a la Fred,This is Fred’s recipe. You can use any type of tomatoes. We prefer using cherry or grape tomatoes for this dish. The longer they marinate the better. A quick and easy side dish for the hot summer.,Fabulous easy summer recipe. used a balsamic Italian dressing (which turned out great), fresh parsley from the garden and freshly grated Parmesan. Skipped the sugar as I thought the tomatoes would be sweet enough. And I tossed in a little fresh mozzarella that happened to be in the fridge. Marinated for about 24 hours and has great flavor. Oh, and while I cut down everything by about 1/4, I left the parsley amount the same.
