    I have made this recipe twice, and it went directly into the trash both times. The first time, I made it to the letter: quartered red potatoes, tight foil, 350, the works. The potatoes were BARELY cooked by the end. The second time, I cubed them, made the foil less tight, upped the temps to 400, and cooked for an extra half hour. The potatoes that time ended up halfway cooked. Clearly, red potatoes are either not meant to be roasted or need to be roasted for about 2 hours. I'm done trying this.

    Preheat Oven to 350 Degrees F.

    Place Potatoes and Garlic in a Lightly Greased Roasting Pan; Cover Tightly With Foil.

    Bake For 45-60 Minutes or Until Potatoes Are Just Fork-Tender.
