Fresh Orange Muffins,I got this recipe from one of my SILs after having them at her house. Next time I make them I think I will add miniature chocolate chips!,I’m glad I read the reviews. I was skeptical about using the peels. Great, easy muffin that can be altered without fuss. Great as is. I had some not so pretty oranges to use up and this was perfect. I have eaten three this morning as soon as they came out of the oven. Two alterations I made was using 1/4 cup of flax seed meal in place of a 1/4 cup of the flour and sprinkled the top with turbinado sugar. Don’t be concerned with the lumpy batter. It works out. I will save this one and make again and again.

Preheat Oven to 400f; Spray a Muffin Tin (12) With Non-Stick Cooking Spray Like Pam and Set Aside. |

Put Orange Quarters in Food Processor (or Blender) Along With Orange Juice and Process or Blend Until Pureed. |

Add Egg and Butter to Food Processor and Combine; Pour Into Large Bowl. |

Combine Dry Ingredients Together in a Separate Bowl, Then Add All at Once to Orange Mixture. |
