Frito Corn Salad, I tried this at a Christmas brunch the quilt guild had I had to hunt down the one who brought this in and get the recipe , I tried this recipe, but altered it by adding one drained, washed can of red beans and one drained, washed can of white chili beans Used a bit more mayo, and used 2 cups of mexican shredded cheese Added no other seasonings at all My family loved it, especially with the crushed Fritos on top for the crunch , I am a volunteer to provide food for funeral luncheons in our parish I have made this twice now and shared the recipe a number of times I did change the recipe slightly and replaced the green pepper with a yellow one and have used a Mexican or Taco cheese mix for the cheese ingredient This is a go to recipe for me to take to any potluck that will be serving a number of people
