    I like the idea of the dried fruit in a muffin. used 1/2 cup dried cherries and 1/2 cup currants. I think this needs something else, maybe a touch of either cinnamon or nutmeg. Oh, I also used pecans since I didn't have any walnuts. Made for Football Pool 2011.

    Fruit and Oatmeal Muffins,This was a recipe I put together to use up some dried fruit. They are a dense muffin and reduced fat. You can use a sugar substitute to even reduce the calories. I sometimes use an egg substitute, too. These muffins have become so popular with our friends that every time we have a tailgate party or golf get together I must bring them.,I like the idea of the dried fruit in a muffin. used 1/2 cup dried cherries and 1/2 cup currants. I think this needs something else, maybe a touch of either cinnamon or nutmeg. Oh, I also used pecans since I didn’t have any walnuts. Made for Football Pool 2011.,A nice change of pace to our muffin routine. They are a dense muffin but still have enough moistness that you don’t feel you have to grab a drink right away. used a homemade applesauce that had cinnamon and nutmeg already mixed in and then used dried cranberries (that is our family favorite!) and that combination was wonderful. I’d like to try it with dried apple chips too. Great with a cup of coffee in the morning and warmed up just a bit in the microwave. Thanks for sharing a nice muffin recipe!     Grease and Flour Muffin Pan.

    Soak Oats in Buttermilk For 5 Minutes.

    Combine Dry Ingredients,Set Aside.

    Combine Beaten Egg,Applesauce, Brown Sugar, Vanilla and Blend Well.

    Add to Oatmeal/Buttermilk, Blend Well.

    Add in Fuit and Nuts.

    Fill Muffin Cup 3/4 Full.
