1 cup coconut, plus
1/2 cup coconut
2 eggs
1/2 cup brown sugar

Fruit Cocktail Cake From A Cake Mix

    Made this last weekend and it was so yummy! DH wanted me to make more this week end. I did 'flub' my way thru it. Didn't really have what the recipe called for so this is what I did: 1 Duncan Hines super moist yellow cake mix. Approx. 3 c flaked coconut, 30 oz fruit cocktail! eek! Drained most of the juices off the cocktail, threw it in my kitchenaid along with the eggs and the called for coconut. Mixed on med/low for 2 mins, (beat the fruit up a bit). then added the cake mix and did 2 more mins. Sprayed 1 8x8 and the next size down from 9x 13; (it was on an away mission of mercy). filled my pans. During the mixing, took rest of coconut and brown sugar and tossed the brown sugar in the coconut. I'm not good when it comes to sprinkling and have it turn out even and pretty. Just not a baker. Always try to follow a new recipe to the letter, then later tweek if I want. But sometimes ya gotta do what ya gotta do. This is fantastic. Has fruit in it, not covered in icing. My granny made this long ago and this is one of those ultimate childhood comfort foods from days gone by. Thank you for sharing...:)

    Fruit Cocktail Cake (from a Cake Mix), This delicious cake comes together fast, starting with a cake mix I think the flavor is very subtle, and the cake is quite moist The original recipe had a syrupy sweet icing on it, but I added the coconut/brown sugar on top instead, and I think it makes this a nice snacking cake (*NOTE: used a fruit cocktail I’ve found that has guava, mango, etc , and found the pieces a little large, so I chopped it up a bit before adding to mixture The regular fruit cocktail with grapes, etc , should be fine w/o that), Made this last weekend and it was so yummy!     Preheat to 325*.

    Combine Cake Mix, Fruit Cocktail With Juices, 1 Cup of Coconut and Eggs in a Large Mixer Bowl.

    Blend, Then Beat at Medium Speed For 2 Minutes.

    Pour Batter Into Greased 9x13 Pan, or Two 8x8 Pans.

    Sprinkle Batter Evenly With Remaining 1/2 Cup of Coconut, and Then 1/2 Cup of Brown Sugar.

    Bake at 325* For 45 Min (if 9x13 Pan; About 30-35 Min For Two Pans).

    Serve Warm or Room Temp; Stays Moist For Several Days.
