Zucchini Garlic Chicken Skillet, A very quick and easy dish for a middle-of-the-week supper , I read some of the reviews before making so made some adjustments I cut the chicken and potatoes into bite size pieces used boxed chopped tomatoes and included the juice in the two cups I added chopped fresh basil, oregano, and lemon thyme when I added the tomatoes It still needed a little something So next time I think Ill add some crushed red pepper flakes with the chicken I might even rub the chicken with some seasoning It was almost like a quick chicken cacciatore! Enjoyed it!
