Garlic & Lemon Roast Chicken Thighs, The “difficult” part in this recipe is to puree all ingredients except the chicken. Roasting gives it a different texture and taste to grilling it. Very simple and fast recipe., I made the recipe exactly as posted. I had half a bag of baby potatoes and the oven temperature and baking time for the chicken thighs is good for roasting them. I coated the potatoes with oil and coarse salt and placed them along each side of four chicken thighs which fit down the center of my broiling pan, The chicken thighs were perfectly cooked with the crispy skin we like and the potatoes perfectly roasted. We liked the chicken very much but I will try it with double the marinating time next time. Will also take advantage of the oven time and temperature to roast potatoes with the chicken again. This recipe is definitely a keeper!, This was very good. used a teaspoon of garlic powder instead of fresh, which seemed just about right. I only marinated it about 45 minutes, but I think next time I’ll marinate it all day just because the marinade didn’t seem to penetrate the chicken very much.
