Preheat the Grill to Medium Hot. Finely Chop the Mushroom Stalks and Set Aside. Spray the Mushroom Caps All Over With Oil and Place on a Grill Rack, Gill-Side Up. Grill Gently For 5-6 Minutes, Then Turn Them Over, Season Well, and Grill For Another 5 Minutes, or Until They Start Weeping Black Juice. Turn Them Over So They Are Gill-Side Up Again and Set Aside Until Needed. |

Spray a Large, Non-Stick Frying Pan With Oil and Place Over a High Heat. Add the Garlic, Spinach, and Reserved Chopped Mushroom Stalks, Stir-Fry For 4-5 Minutes, Then Add the Nutmeg. |
