Good apples to use would be Granny Smith, Jonagold or McIntosh If you have access to heirloom apples, choose some that have some tartness to them This recipe is adapted from The Pancake Handbook , I make this all the time My wife loves it Always forget about the picture because when you take it out of the oven All you want to do is eat it up , When I was a kid we had a local restaurant that served a killer apple pancake Its been nearly 30 years since Ive had that pancake but I remember it like it was yesterday This recipe nailed the flavor exactly Absolutely loved it I didnt have a cast iron skillet so I baked it in an 8 glass pan Worked perfectly This recipe is definitely a keeper
