2 lbs boneless lamb stewing meat cut into 3/4-inch cubes or 2 lbs boneless beef roast cut into 3/4-inch cubes
1 large onion, finely chopped
1/3 cup cooking oil
1 teaspoon turmeric
1 1/2 cups water
6 dried limes or 1/2 cup fresh lime juice
3/4 cup kidney bean canned is fine
1 large potato, diced optional
salt
black pepper

Ghormeh Sabzi – Persian Green Stew

    Although this is not the traditional recipe this is very close to how my Persain makes it. No potato or fenugreek. We use 2 bunches of green onion instead of garlic chives and onion. Collard greens instead of spinach and we add a pinch or two of saffron. His grandmother makes it the traditional way. While it is good it's not nearly as good as our version.

    Ghormeh Sabzi – Persian Green Stew, An exquisite Iranian dish., Although this is not the traditional recipe this is very close to how my Persain makes it. No potato or fenugreek. We use 2 bunches of green onion instead of garlic chives and onion. Collard greens instead of spinach and we add a pinch or two of saffron. His grandmother makes it the traditional way. While it is good it’s not nearly as good as our version., I was able to eat this when i was still in my younger years when my Aunt was still married with her Iranian hubby. And it was a long time ago. And i met an Iranian friend where i was able to eat this again. OMG! this really tastes good. I wanted to try it at home but don’t know where to buy those herbs. Can anyone suggest where could i find it here in the Philippines. I tried looking for it in SM Hypermart but couldn’t find it there. I hope i could get suggestions here. Thanks for anyone who could give me a reply on this.

    Trim Meat and Cut Into 3/4" Cubes.

    Fry Onion Over Medium Heat in Half of the Oil Until Golden.

    Add Turmeric and Fry For 2 More Minutes.

    Increase Heat, Add Meat Cubes and Stir Over High Heat Until Meat Changes Color and Begins to Turn Brown.

    Reduce Heat.

    Add Water, Drained Kidney Beans, Salt and Pepper to Taste.

    Cover and Simmer Gently For About an Hour or Until Meat Is Tender.

    Fry Potatoes Over High Heat in the Remaining Oil Until Lightly Browned.

    Add to Sauce, Leaving Oil in the Pan.

    Cover and Simmer For 10 Minutes.
