    Just a small suggestion. The basic ingredient list is great. Both Alice Waters and I love the mortar and pestle. Very popular in the Mediterranean and Middle East I would suggest putting the garlic and ginger in a mortar with a bit of sea salt and then pound it into a paste. Don't use a ceramic one, as it will not likely take the abuse. I have a custom-turned wooden mortar and pestle. It will just about take any abuse I throw at it. I also added a bit of fresh basil leaf, and pounded it into the paste as well. That's it!

Put cup of water, in the pot and used the insert to place the marinated swordfish steaks, above the water. I also added some soy sauce, to taste. Set it for 15 minutes, with some fresh asparagus on top, and what a meal!!!

    Place Ginger and Garlic in a Small Bowl and Mix Together to Form a Paste. Add the Lemon Juice, Spring Onions, Chili and Oil, Then Mix Again.

    Add Swordfish Steaks and Coat Well With the Mixture. Leave to Marinate For 15 Minutes.

    Preheat Grill to High.

    Remove Fish from Marinade and Place on Grill Rack. Grill For 5-6 Minutes, Turning Once.

    Drizzle With Remaining Marinade and Serve With New Potatoes, Lime Wedges and Mixed Salad.
