3 cups chicken stock
2 tablespoons chopped fresh flat leaf parsley
2 tablespoons fresh scallions
1/2 lb button mushroom
1 tablespoon fresh lemon juice
16 whole shallots
1/2 cup water
1 teaspoon sugar
6 tablespoons whipping cream

    Glossy Chicken Fricassee, Adapted from Mediterranean Food Market, this is a delicious company or family dinner!, We absolutely loved this dish! I have to admit I have never made fricassee before! The only changes I made were to use chicken breasts instead of thighs and I omitted the mushrooms (personal preference) Will definitely make again! Thanks for sharing Sharon!     Wash the Chicken Pieces and Dry With Paper Towels.

    in a Deep Saute Pan, Over Medium Heat, Put Half of the Butter and Extra Virgin Olive Oil.

    Add Half the Chicken and Brown All Sides About 10 Minutes.

    Set Aside.

    Repeat With the Remaining Butter and Chicken.

    Transfer the Fried Chicken to Pan and Sprinkle With Flour, Making Sure All Pieces Are Covered.

    Simmer For 4 Minutes.

    Add the Wine, Bringing Up the Temperature Until It Reaches Boiling Point.

    Then Add the Chicken Stock and Keep Stirring Until It Is Well Mixed.
