Greatest Banana Nut Bread Ever

    This was probably the best banana nut bread I have ever had. I followed the recipe almost exactly, leaving out the cinnamon. My bag of chopped pecans was 2 cups so I just used the whole bag. One technique used which was quite effective was instead of butter and flour in the pan I cut a piece of parchment paper and just sprayed it with a bit of oil. I cut the piece longer so that the edges of it hung over the pan. Think of it as a sling. When done I was able to just lift the loaf with no worry of it sticking to the pan. Like many other reviews I found that I had to add on a good 10 - 15 minutes cooking time before the toothpick came out clean. This was fairly EZ to make. This recipe hits all the marks for flavor, texture and moistness. I recommend it with enthusiasm!

    Preheat Oven to 325f.

    Lightly Butter and Flour Two 8" X 4" Loaf Pans, or 6 Mini Loaf Pans. Baking Time For Mini's 50 Minutes.

    in a Large Bowl, Cream Sugar, Butter and Vanilla Until Fluffy. Stir in Eggs One at a Time, Beating With Each Addition.

    Stir in Bananas and Sour Cream.

    in a Second Bowl, Combine Flour, Soda, Baking Powder, Cinnamon and Walnuts; Stir Into Banana Mixture Just Until Combined.

    Pour Into Pans. Bake About 55-60 Minutes For Large Loaf Pans or 50 Minutes For 6 Mini Loaves.
