Green Eggs And Ham Mexican Style

Features:
    Cuisine:

What a great idea -- so easy and tasty! Made a lovely, quick supper, served with a tossed salad. We used smoked ham because chorizo isn't easy to find where we live. And if you aren't going to make your own salsa, be sure to use a good jarred one; I'd recommend Frontera if you can find it!
