Green Eggs and Ham – Mexican Style,This is a simple and delicious Mexican version of Green eggs and Ham. Yes, the eggs are green, but if you love salsa verde like I do, this is a good thing! Enjoy! Good with a side of warmed fresh soft tortillas.,What a great idea — so easy and tasty! Made a lovely, quick supper, served with a tossed salad. We used smoked ham because chorizo isn’t easy to find where we live. And if you aren’t going to make your own salsa, be sure to use a good jarred one; I’d recommend Frontera if you can find it!,Love the addition of the chorizo (used Mexican chorizo). Also topped with some nonfat sour cream.
