3/4 cup mayonnaise
6 - 8 garlic cloves, minced fine (or to taste)
1 - 2 medium chipotle pepper, minced fine (or to taste)
1 tablespoon sriracha hot chili sauce (rooster sauce)
1 teaspoon soy sauce, in each mussel
smelt, roe (masago)

    Rinse Mussels and Remove Beards.

    Steam Mussels Till They Open Slightly Then Remove. Do not Cook Completely. They Will Finish Cooking on the Grill.

    Remove Top of Mussel Shell. Leave Mussel in Bottom Shell.

    Mix Mayo,Garlic,Peppers and Rooster Sauce Completly. Blend If You Want Till Smooth.

    Add a Tablespoon of Soy Sauce to Mussel in Shell and a Dolop of the Aoli on Top.

    Have Grill on Medium Low Heat and Grill For 3 to 5 Minute Soy Sauce Should Be Cooked Away and Carmelized,

    Top With a Little Masago For Garnish.
