Adjust Servings:
3 small zucchini, cut lengthwise into 1/4 inch thick slices
1 tablespoon olive oil
1/8 teaspoon salt
1 pinch ground pepper
1 1/2 ounces goat cheese
1 tablespoon minced fresh parsley (i've used dried and it is just as good)
1/2 teaspoon lemon juice
2 ounces baby spinach leaves (about 2 cups)
1/3 cup fresh basil leaf

    Made these as an appetizer just for the 2 of us ~ VERY, VERY NICE! The only thing I changed was to cut the amount of basil back by almost half! We particularly liked the use of goat cheese here!     Discard Outermost Zucchini Pieces.

    Brush Zucchini With Olive Oil on Both Sides. Sprinkle With Salt and Pepper.

    Grill Until Tender (about 4 Minutes).

    in a Small Bowl, Combine Goat Cheese, Parsely, and Lemon Juice.

    Put 1/2 Teaspoon of the Cheese Mixture About 1/2 Inch from the End of a Zucchini Slice.

    Top With a Few Spinach Leaves and One Small (or Half a Large) Basil Leaf.

    Roll Up and Place Seam Side Down on a Platter.

    You Can Make These Up to a Day Before You Are Ready to Serve and Store Them in an Airtight Container in the Refridgerator.
