Guacamole Salsa

    I had a stray 19oz can of tomatillos in the pantry so decided to try this. used half of the can and then pureed the rest of the ingredients as directed. I seeded the jalapeno, but wished I hadn't. This jalapeno was a tad wimpy in spiciness, but you never know. The recipe states "one slice of onion". used about 1/3 cup. I served it with your Skinny Enchiladas, chips, and a salad. I did like that the salsa kept well and retained a pretty color. Made for Pick A Chef 2013.

    Peel and Wash Tomatillos. Cut Into Quarters and Place in a Blender. Follow With Jalapeno, Cilantro, Onion, Garlic, Avocado and Salt. Make Sure Tomatillos Are on the Bottom. Blend Until Smooth!
