    We liked this recipe. I decreased the peas, and added asparagus tips. Also added about a cup of sauted Baby Bellas and two hard boiled eggs. This is the way my mom made either Chicken/Ham Ala King. I omitted the Piementos and celery, and added a rounded TLB of coarse mustard. Mustard and Ham go together well. We felt it gave it just a little kick, that perhaps some folks are stating it misses.

    Melt Butter in a Heavy Saucepan, Saut Onion and Celery Over Medium Heat For 5 Minutes.

    Add the Flour and Stir Until Incorporated.

    Slowly Add the Milk Stirring Constantly Until Smooth and Thickened, Add More Milk If the Sauce Becomes Too Thick.

    Add Remaining Ingredients and Cook Over Low Heat, Stirring Frequently Until Heated Through.
