Directions
Harvest Pumpkin Apple Bread,All the flavors of Autumn combined into one scrumptious bread. This tastes great with coffee or tea! I make this using Egg Beaters and unsweetened applesauce in place of half the oil to make it healthier. Prep time includes cooling time.,Did anyone else have an issue with the baking time? After 65 mins at 350* my 2 loaves were still uncooked in the center. Followed recipe exact. Right now am baking 10 more mins in hopes they come out right. I hate to waste the ingredients and my time. I M not in a high elevation are or anything weird. My oven usually is accurate within 2 mins of suggested bake times.,Followed except used Avocado Oil. Rather bland, low on flavor. Will try again with part Whole Wheat Flour, additional Apple & spices. Will probably cut sugar down to 2 cups. May add raisins and/or nuts next time. Might also try replacing some flour with oats.

Combine Sugar, Pumpkin, Eggs, Vegetable Oil and Apple Juice in Large Mixer Bowl; Beat Until Just Blended. |
