Healthier French Toast, This uses Recipe #256341 (a mixture of carrots and sweet potatoes) to boost the nutrition of traditional French Toast Since the puree has a mildly sweet flavor, this actually yields a slightly sweeter French Toast than normal This is adapted from the awesome book the sneaky chef which focuses on adding nutrition to everyday recipes for kids and other picky eaters If you don’t have time to make your own pureed carrots and sweet potatoes, use jarred baby food , used half a jar of babyfood carrots my son didn’t even know the difference!! Thanks for the idea!!, I made these for the kids and they ate it no problem I tried it and could not tell the difference either used jarred baby food for the puree – 1/2 the amount in carrots and 1/2 in sweet potatoes Will definitely be making this again!

Combine Eggs, Milk, Orange Puree, Maple Syrup or Honey, Cinnamon, and Vanilla in a Large Shallow Dish. |

Cook in Skillet Over Medium Heat. Use a Small Amount of Oil (or Butter) to Keep the Toast from Sticking. Allow the First Side to Brown, Then Flip to Brown the Second Side of the Bread. |
