    Loved this recipe! I made it for Easter dinner and everyone devoured it. They were later pleasantly surprised that it was a "skinny" version. my only question is...the recipe calls for one cup of low fat cheese...are you saying 1 cup by volume or 1 cup by weight, as in 8 0z....used 5 oz, grated it on the smallest shred size on my box grater and had tons of cheese! just wanted to make sure I wasnt' overdoing it!

I think the sauted onions were perfect and added flavor. Next time I will layer the potatoes in the baking dish and pour the sauce over it for more firm potatoes but it was superb!

    Heat Oven to 375 Degrees.

    Coat a 2-Quart Baking Dish With Cooking Spray.

    Melt Butter in a Large Frypan Over Medium Heat; Add in Onion and Cook Stirring Occasionally Until Onion Begins to Brown About 5 Minutes.

    Stir in Flour, Then Slowly Add in Milk.

    Add in Potatoes; Stir to Mix; Bring to a Boil.

    Stir in 3/4 Cup Cheese, Salt and Black Pepper.

    Pour Mixture Into Prepared Baking Dish Then Spread Out.

    Bake For 1 Hour Uncovered.

    After 1 Hour Cooking Time Cover With Foil and Continue to Bake Another 20 Minutes More.
