Healthy Peanut Butter Banana Oatmeal Cookies

    I did not have any coconut, so I added a few dried cranberries and walnuts. I loved these cookies! Im on a very restricted diet, but these did not taste like diet cookies. My bananas came from the freezer, as I had planned to make bananas nut bread. I left some small chunks of bananas.

I left some small chunks of bananas.,These were so delicious I ate 5 of them right out of the oven! I don’t like coconut flakes so I replaced that with 2/3 cup of walnuts. I didn’t find them bland, but I would say they’re more of a quick to-go breakfast; don’t expect a sweet cookie.

    Preheat Oven to 350.

    Mash Bananas With a Fork and Mix in Peanut Butter, Apple Sauce, Vanilla, Salt, and Cinnamon.

    Drop by Tablespoon Onto a Non Stick Cookie Sheet (lined With Parchment Paper or Sprayed With Non-Stick Spray). use a Small Cookie Scooper.

    Flatten a Bit to Shape the Cookie (they Don't Rise or Spread at All When Baking).

    Bake For 12-15 Minutes, Rotating the Pan Halfway Through.
