4,1/2 large leaves butter or bibb lettuce cup 2% greek yogurt or dairy free version
4,1/4 oz good quality tuna in olive oil drained* (used tonino) small avocado 1 oz
1,3 heart of palm drained and sliced tbsp fresh chopped cilantro
1/4,1/2 cup cherry tomatoes quartered jalapeno pepper seeds and membrane removed for mild heat
1/4,1 cup shredded or grated carrot clove garlic
2 thinly sliced red onion separated into rings juice from 1/4 lime
2,1/8 tablespoon avocado yogurt dressing recipe follows tsp kosher salt
freshly ground pepper to taste
1 tablespoon water as needed

    I made the avocado yogurt dressing in my magic bullet, it makes a larger portion than is needed in this recipe but it can easily be stored in an air-tight container in the refrigerator and used a veggie or cracker dip, salad topper or drizzled over grilled fish.,If youre not familiar with hearts of palm, they come canned or in a glass container available at Trader Joes or in most supermarkets. They make a great addition to salads.,Look for lettuce leaves that are large enough to hold the filling.,I also like to using iceberg lettuce for larger cups. Romaine lettuce and baby romaine are also great.,If you prefer, you can turn this into a big chopped salad by simply serving this over a bowl over chopped lettuce.

    Place Lettuce Leaves on a Plate or Cutting Board. Top Each Leaf With 1 Oz of Tuna, Hearts of Palm, Tomatoes, Carrots and Red Onion.
