1/3 cup date syrup (more to add sweetness)
2 teaspoons baking soda
2 teaspoons cinnamon (possibly even more)
1/4 teaspoon salt
3/4 cup water
1/4 cup soymilk
1/4 cup applesauce
1 egg
1/2 cup raisins

Healthy W.W Oatmeal Raisin Muffins

    Loved these heathy, high fiber muffins. I did use 1/2 cup of the date syrup and recipe #145505 in place of the cinnamon. Also mixed in a finely chopped apple in place of the apple sauce. The water was omitted and enough non-fat milk was mixed in for proper consistency. These would be excellent with some chopped nuts stirred in. Made for *PAC Spring 2009*

    Preheat Oven to 350. Line Muffin Tin With Cupcake Holders. Mix Dry Ingredients in a Large Bowl. Combine Wet Ingredients in a Separate Bowl. Add Wet Ingredients to the Dry Ingredients. Does not Need to Much Mixing. Add Raisins Last. Pour Into Cupcake Holders About 3/4 Full. Bake For 10 to 15 Minutes. Until They Are Moist but not Wet. Take Out of Tin and Cool on a Cooling Rack. It Is Much Better Room Temperature.
