Directions
Whole Grain Flax Seed Pancake Mix,This mix is great to have on hand for quick, delicious pancakes. Keep in mind that 1 cup of the mix, when combined with the egg, oil, and water, will make 5 to 6 pancakes. To grind the flax seeds, simply use a coffee or spice grinder. This would make a great gift in a basket with a pancake turner, skillet, syrup, etc. Taken from Whole Foods.,Needing to use what was on hand, I had to sub some ingredients. For the 1.5c corn meal, used 1/2c rye flour, 1/2c AP flour and an extra 1/2c oatmeal (beyond the original 1/2c in the recipe). used regular WW flour instead of WW pastry flour. The mix then required much more liquid, so I added water until I got the right consistency. With all those changes, this was still a phenomenal recipe. The pancakes are not heavy, like whole grain pancakes sometimes are, but rather were pretty fluffy. (At least the way I made them, they were fairly light.) The 1c finished mix for me made 14 pancakes (about 3″ each). Really glad I have 3 more recipes’ worth in the freezer now!,This is a great mix and makes a very hearty pancake. I buy flax seed already ground into meal so I didn’t have to do that step. I got 5 pancakes out of a batch.

For the Pancakes, Put 1 Cup of the Pancake Mix, Egg, Oil and Water Into a Large Bowl and Stir Together With a Fork Just Until Combined. |

For Each Pancake, Pour About 1/3 Cup of the Pancake Batter Onto a Greased Griddle and Cook, Flipping Once, Until Golden Brown and Cooked Through. |
