I feel you have to pre-soak the oats; there's simply no way to get them to be an edible texture otherwise. used Quaker and prepared as other commenters have and these simply did not work. Maybe the brand the contributor used was a quick or instant oat? If that's even a thing for steel cut oats.

    Whole Grain ‘steel-Cut’ Oatmeal Cookies,I just recently started eating Coach’s ‘steel-cut, cracked and toasted’ Oats and it’s got me hooked. It’s nutty and full of flavor. The original recipe from the package the brown sugar is packed and the table salt is regular salt. Please note that I’m not sure how this will work with regular oatmeal. The number of cookies will depend on the size you make them. Okay, I bought another brand of ‘steel-cut’ oatmeal to see if there was a difference. There was enough difference in the texture, flavor, cook-time and overall quality (to me) that I recommend you use the Coach’s brand for this recipe.,Pretty much tastes like sweetened gravel. I followed instructions exactly even though my instinct was to soak oats. We are at 4600 altitude, but I did not make any adjustments. I baked first batch at 375 degrees for 12 minutes and they were too crisp and almost burned. I cooked subsequent batches on 350 & 325 for 12 minutes and finally the last batch at 300 for 16 minutes. The last batch was the best. Nice and chewy, but the steel cut oats were about 80% raw and way too hard which ruined the overall cookie. used Trader Joes steel cut oats and may try soaking them for a short time next time and make adjustments for high-altitude. Or I may just stick with rolled oats in the future.

    Preheat Oven to 375 Degrees.

    Cream Butter.

    Add Both Sugars, Salt, Baking Powder, Baking Soda, Eggs, Vanilla, Cinnamon and Half the Flour. Beat to Combine.

    Beat in the Remaining Flour.

    Add Oats, Pecans and Cranraisins.

    Drop by Rounded Teaspoon on Ungreased Cookie Sheet.

    Bake at 375 Degrees For 12-15 Minutes or Until Edges Are Golden Brown. Cool on Wire Rack.
