    For muffins: -use 2 eggs. -replace vanilla with 1 tsp cinnamon -replace almond milk with Greek yogurt -replace walnuts with pecans. Add cinnamon to flour mixture, holding out nuts to add last. Otherwise, mix as instructed. Fill 12 muffin tins and top with 1-2 tsp streusel (see below). Bake at 450 for 8 minutes; reduce heat to 350 and bake 10 minutes more. For streusel: add to food processor 2 tbsp each of oats and nuts; 1/2 tsp each of stevia, cinnamon and olive oil. Pulse 2-3 times until course crumbs form.

    Whole Wheat Oat Banana Bread, Very gooey and yummy, this is my favorite Banana bread recipe TIPS: Buy whole wheat flour that has NOT been bleached Use only PURE honey Use Almond, Rice or Soy milk (try not to use cow milk) Extra virgin cold pressed olive oil has the best taste and has no extra junk in it Use real vanilla extract, imitation has too many chemicals and not as good a flavor Has plenty of fiber to help cleanse the colon which is always the best place to start cleaning for a successful diet and a healthy lifestyle , For muffins: -use 2 eggs -replace vanilla with 1 tsp cinnamon -replace almond milk with Greek yogurt -replace walnuts with pecans Add cinnamon to flour mixture, holding out nuts to add last Otherwise, mix as instructed Fill 12 muffin tins and top with 1-2 tsp streusel (see below) Bake at 450 for 8 minutes; reduce heat to 350 and bake 10 minutes more For streusel: add to food processor 2 tbsp each of oats and nuts; 1/2 tsp each of stevia, cinnamon and olive oil Pulse 2-3 times until course crumbs form , A couple of changes for items on hand/subbed: I didn’t have oat bran and wanted to boost protein and add texture, so I subbed a scoop of vanilla protein powder (reduced vanilla to 1 tsp) and old fashioned oatmeal to equal 3/4 c I didn’t have walnuts (and am not a fan) so I subbed leftover ground pistachio Subbed 1% milk All else was the same and the loaf turned out great, although a bit too sweet for me–holy honey, that’s A LOT! I will definitely reduce the honey next time! Thanks!
