Heavenly Angel Hair Pasta,Delicate angel hair pasta served with spinach, tomato and lime sauce, a treat indeed! From the Pasta cookbook. You may substitute lemon for the lime, if desired.,The lime and hot sauce in this were delicious – a very nice surprise!,This was delicious!! Thanks to other reviewers that mentioned canned tomatoes, which is what I had on hand. Even with using canned tomatoes, it was fabulous! I left out the lime/lemon because I wasn’t sure I would care for it. used garlic oil, so there was no raw garlic taste to it. Macaroni’s used to serve a similar dish that I would order and enjoy; so I was very happy to find this recipe. I look forward to having fresh tomatoes to use in it. I think Roma tomatoes or the vine ripened cherry tomatoes would be the best bet for off season. Sharon123, thank you for sharing!

Combine the Tomatoes, Spinach, Garlic, Lime Zest and Juice in a Bowl. Stir in the Tabasco Sauce and Olive Oil, Cover and Set Aside For 20-30 Minutes. |

Bring a Large Pan of Lightly Salted Water to a Boil and Cook Pasta Until Done, About 10 Minutes(less For Al Dente). |

Drain the Pasta and Return to Clean Pan. Add the Tomato Mixture and Toss Well. Season With Salt and Pepper to Taste. Add the Parmesan Cheese to Taste, Toss Again, and Serve in Warm Bowls, With Extra Parmesan on Top, If Desired. Enjoy! |
