Herbed Tomato and Chickpea Soup,A flavourful vegetarian soup. Filling and nourishing and very tasty.,Delicious! I added a few handfuls of baby spinach per CaraLynnie’s review. I also added a few stalks chopped celery (with leaves) with the onions etc. and pureed about half the chickpeas in a blender after cooking for about 10 minutes, then added back at the same time I threw in the spinach. This is a quick, healthy and tasty soup that I will make again and again. Reminds me of Pasta de Ceci only with tomatoes added. Loved it!,I really liked this soup. I added more broth (4c), a little red wine and a few handfuls of baby spinach. I will definitely be making this again!

Heat Butter or Olive Oil Over Medium Heat and Saute Garlic, Onions and Carrot Until Translucent; Add Pepper, Herbs and Tomatoes and Bring to Boil (note: I Puree My Tomatoes in the Blender, but You Can Use Them Whole and Break Them Up as They Cook For More Texture); Reduce Heat and Simmer, Uncovered, For 20 Minutes, Breaking Up Tomatoes as They Cook; Mix in Chickpeas and Broth; Taste and Adjust Seasoning; Simmer, Uncovered, For 20 Minutes to Blend Flavours; Add More Broth or Water to Thin, If Necessary; Serve With a Sprinkle of Dried, Crumbled Basil. |
