Hobo Casserole,I adopted this recipe and found it to be the perfect comfort food on a “I really don’t want to bother cooking” kind of day. It used basic ingredients that are always in my pantry and freezer, and couldn’t be more simple to prepare. It isn’t a pretty dish, but it is hearty and filling.,I have fixed this several times, but made a few changes. use only very lean ground beef — 96%. I also add another all purpose seasoning and cut back on the salt as I have high blood pressure. I don’t use American cheese, but a mixture of cheddar (white, mild and sharp) and provolone. And because my kids and I like it, use a 9×13 pan, but I parboil the potatoes to make sure they are done! Add roasted asparagus (olive oil, kosher salt, garlic and a little cheese) as a side and dinner is served!,My kids really did not like this, so we won’t be making it again. The flavors were a bit retro and reminded my husband and I of our childhoods in the 1970s.

Cover With Aluminum Foil and Bake For 1-1 1/5 or Until Potatoes Are Tender. |
