Directions
Spaetzle (noodles),,This is the same exact recipe I got from my German mom. Using the food processor makes it super easy. Start with the flour and spices, add the eggs and process continuously (don’t stop) while dribbling the water through the spout till you have a smooth dough with the desired consistency. Watch carefully so it doesn’t seize up. The amount of water is a personal preference: I like a thicker dough while my husband likes it runnier. Occasionally, I substitute a cup or so of whole wheat flour. Adding coarse black pepper and fresh rosemary at the end, leaving the bits of herb still intact, is a very nice upgrade.,I don’t have unbleached flour, can I sub self-rising or AP in it’s place?

Using a Sptzle Machine or a Colander With Medium Holes, Press the Noodles Into a Large Pot Full of Boiling Salted Water. |

Cook Noodles in the Water About 5 Minutes or Until They Rise to the Surface. |
