    Yummm. SO glad to find this! Had this in Santa Fe at the home of a single dad about 10 years ago, a quick fix meal for drop in guests and one that he said he fixes often. He rattled off the short list of ingredients which seemed like easy to remember so didn't write it and kind of forgot it. But it is a GREAT simple comfort food dish that works "as is" or that can easily adapt to a wide range of food prefs, techniques. and innovations (as noted in the other comments); we've even added shrimp and lovvvvvved it, also - had added left over rotisserie chicken! Cheese+sour cream =kind of high fat (if that is a concern) but I just , well, eat less and serve a good veg side or salad.
