Honey Glazed Plantains

    I made this recipe without any alterations, and I really liked how the honey and green onion (scallion) imparted such wonderful flavors to these pan-fried plantains. used ripe yellow plantains with just the beginning of black specks in the peel, so after cooking they turned out pretty tender with just a hint of caramelizing on the edges, and they had lots of flavor. I served them with homemade Johnny Cakes and some fresh blueberries for breakfast. Thanks, breezermom. We really liked these Honey Glazed Plantains. Made for Culinary Quest 2017 (Central America).

A nice sweet side dish.     Preheat a Medium Frying Pan and Coat With Canola Oil.

    Slice Plantains on the Bias, Then Saute Until Brown.

    Mix in Butter and Scallions Until Butter Is Melted and Scallions Are Softened.

    Remove from Heat, and Stir in Honey and Parsley.
