Honey Oatmeal Cake,This recipe was given to me by a dear friend. It is very easy to make and higher in fiber than most cakes.,Wonderful recipe! I made as directed but used 1/4 cup butter and 1/4 cup applesauce (applesauce added with the honey, eggs, and vanilla). I also added 1/4 t. cloves. This recipe fits perfectly in the Nordic Ware honeycomb pan (bake 35 – 40 minutes in that pan), 40 minutes in a 13 x 9 pan.,Y my cake seems to be uncooked from inside. Kept it for more than 40 mins now.

Preheat Oven to 350 Degrees. |

Spray a 13 X 9 X 2 Inch Non-Stick Cake Pan With Cooking Spray. |

Pour Boiling Water Over Oats and 1/2 Cup Butter and Allow to Rest For 20 Minutes. |

Mix Together the Honey, Eggs and Vanilla. |

Add to Oatmeal Mixture. |
