Absolutely perfect just as it is! Such a nice summer Saturday lunch. I think this will be a nearly weekly thing. Love the idea of serving it in a lettuce cup; maybe next time.

Ina Garten’s Shrimp Salad (Barefoot Contessa),Take a break from the heat of the kitchen and whip up this perfect summer salad.,Absolutely perfect just as it is! Such a nice summer Saturday lunch. I think this will be a nearly weekly thing. Love the idea of serving it in a lettuce cup; maybe next time.,We made this last night as a cool dinner on a hot day. We LOVED it!! We were making it for 2 people and since this recipe is for 10-12 people, we had to do some guesswork on the amount of each ingredient. We didn’t change anything other than use a regular cucumber because we didn’t have an English one. This recipe is a keeper!
