Irish Potato and Leek Soup,This is a tasty, hearty soup for a cold winter’s day or anytime.,Wow, so delicious! used chicken broth. Used cream cheese instead of cream. Add a slice of cream cheese into bowl, ladle soup over it. used 1 tsp dried tarragon 1/2 tsp tarragon dried leaves 1 tsp black pepper Chives fresh sliced 6 cups broth , I did the recipe 1 1/2 times I did not have fresh herbs. Used a potato masher when soup was done, just a few times. I will make this often. So good you dont need meat or miss it!

In Large Pan, Heat the Oil and Add the Leeks, Celery, Onion and Garlic. |

Saute Over Medium Heat, Until the Vegetables Are Soft. |

Stir in the Vegetable Stock or Water, Potatoes, Salt, Pepper& Thyme; Bring to a Boil. |

Simmer Over Medium Heat For 20 to 30 Minutes, Until the Potatoes Are Easily Pierced With a Fork. |

Add the Cream and Herbs and Return to a Light Simmer, Stirring Occasionally. |
