Irish Soda Bread with Raisins and Caraway,I have never made this, and doubt I ever will, since I’m not a fan or raisins. The reason for this submission is that this was a favorite recipe from Chef Jerry O’Leary, who worked in the corporate dining room at Cantor Fitzgerald’s in the World Trade Center. Jerry lost his life on Sept 11. Taken from Oct 2002 issue of “Bon Apetit.”,Inedibly sweet. Irish soda bread crumb should be salty due to the leavening agents & provide a nice foil for the sweet raisins. This is not Irish soda bread- this is dessert. I couldnt find my usual raisin & caraway ISB recipe due to a move & this was a disappointment. If I were to make it again I would cut down the sugar to 1/4 cup & reduce the raisins by at least 1/3. No idea what to do with this sugar bomb loaf. If you like to drink full sugar soda for breakfast with a Krispy Kreme donut, I think youll like this.,I made this recipe as written except used plain yogurt for the sour cream as that is what I had. It was so good I am making it again today but using sour cream. Directions say to make an X in the top but I found it impossible. The dough is too sticky.
